As some of you may know I absolutely love to bake. There are few recipes that are staples for me. Recipes that always come out perfect and are big crowd pleasers no matter how picky or sophisticate the palette. Thanks to my love affair with Pinterest I have brought You Another Tasty Treat!
This past Sunday I made these Olive oil and Sea salt brownie cookies (one of my personal favorites) for my husband's holiday party and true to form they were a big hit. I also had an amazing assistant who helped me with all my baking needs and to lick the extra batter off the whisk (Payment for his help). This cookie recipe comes from a great food blog called Butterlust.
These cookies were super easy to make, no scavenger hunt for fancy ingredients, or over priced items, you will never use again. Do not be afraid of the olive oil instead of butter because the cookies turn out moist and fluffy with a depth of flavor. Welcome to Flavortown! Whats great about these cookies is the dough needs time to rest so you can prep the recipe ahead of time and bake an hour before guests arrive, the batter can sit for up to 24 hours. If you are making them for the kids you can do all the mixing and they can help scoop them onto the baking sheets and sprinkle with the sea salt. This go round I followed the recipe as is and they came out perfect, chewy with the perfect marriage of salty and sweet.
Next time I may add my own twist, maybe caramel drizzled on top or add pretzel pieces into the batter. I know most of us do not want cookies laying around the house, but these are definitely worth it. You can always do what I do, and send all the baked goods to work with my husband. It's a great way to score major points with co-workers.
